To make Bhindi Bhaji, first of all wash the ladyfingers thoroughly and wipe off the water using a cloth or paper napkin.

After this, cut out the stalk and the bottom part (tip) of the ladyfingers and cut all the ladyfingers into round pieces of about 1/3 inch thick.

Heat oil in a non-stick pan or wok over medium flame.

Add cumin seeds in it and when the cumin seeds start turning golden then add chopped onion and garlic in it.

Fry the onions till they turn light pink. Add chopped green chillies and ladyfinger.

Cook it until the ladyfinger begins to shrink and turns dark green.

Keep stirring occasionally with a spoon to prevent it from sticking.

Add chopped tomatoes, turmeric powder and salt, mix well and cook till tomatoes become soft.

Add red chili powder, coriander powder and garam masala powder. Mix everything well.

Reduce the heat and let it cook for a few minutes, then turn off the gas.

Delicious Bhindi Bhaji is ready to serve.

Take it out in a serving bowl and garnish it with finely chopped coriander leaves.

Suggestion:

One needs to use small, soft and fresh bhindi for this recipe.

You can check the softness of the ladyfinger by pressing its tip.

If possible, wash and dry the ladyfinger 2-3 hours before.

Do not add salt to the bhindi beforehand otherwise it will become slimy. Add salt only after the bhindi turns dark green.

Do not cover the ladyfinger while cooking it else it will become sticky.
