Petha is made in many ways, most of the dry or normal Petha sweets are made.

Ingredients for Petha Sweet Recipe:

  • White Pumpkin – 2 kg
  • Sugar – 1.2 kg
  • Lime – 2 tsp
  • Anthill – 3-4 tsp

How to Make Petha Recipe:

Cut out the soft middle part of the white Pumpkin and remove it completely. Cut the white Pumpkin into 2 inch × 2 inch pieces and remove their peel.

After this, glue all the pieces at a little distance using a fork or toothpick.

Mix water and lime well in a vessel.

After this, put the pieces of white Pumpkin in this water and dip it well and keep it for 10-12 hours.

After 12 hours, put the pieces of white Pumpkin in a sieve and rub them well under the tap and wash them with running water.

Then take it out in a plate and keep it aside.

Process of Boiling White Pumpkin:

Put about 2 liters of water in a vessel and boil it, add powdered alum to it, till it dissolves completely.

Add pieces of white Pumpkin in it and boil white Pumpkin on high flame, stirring it with a spoon in between for 20 minutes.

After boiling, when white Pumpkin starts looking transparent, then first put it on a sieve, place it on a vessel.

Wash it thoroughly with running water under the tap again and keep it aside, so that excess water is removed from it.

After squeezing the water well, keep it in a plate.

Method of making Sugar Syrup:

Take sugar and 3 cups of water in a vessel and let it cook till the sugar dissolves in the water. Keep stirring it with a spoon in between.

As soon as the sugar dissolves in the water, put pieces of white Pumpkin in it and cook on high flame till the syrup thickens. Keep stirring it with a spoon in between.

When the syrup thickens, drop some drops of syrup from a spoon and see, if the last drop comes out in the form of a string, then the syrup is ready.

Turn off the gas. Take the syrup container off and keep it aside and let it cool.

Leave the pieces of pumpkin in the syrup for 12 hours or overnight.

After this, you will see that the syrup seems thin when the juice of pumpkin comes out.

Keep cooking on high flame to thicken it. Keep stirring the syrup with a spoon in between.

When the syrup thickens, the color and texture of pumpkin changes. Drop the syrup and see, it is quite thick.

Turn off the gas. Take off the container and place it on a wire stand and let petha cool.

To dry Petha, place a bowl in a plate and a wire on top of it.

So that the extra syrup comes out of the petha and comes on the plate.

Apart from this, the petha should get air from both the top and bottom. So that it dries quickly.

Put the petha on the net and keep it under the fan for 3-4 hours to dry. Delicious petha is ready.

If you want to store it for a long time, then leave it in the fan air for a longer time, about 1 day and 1 night.

Store the delicious petha in any container and enjoy eating it for 2 months.

Suggestion:

Take completely ripe petha to make petha. Its identity is that the petha looks light white from the top.

Cleaning the petha is very important in the initial stage, so it is boiled in alum.

For boiling the petha, take so much water in the vessel that the pieces of petha can be easily dipped in it and boiled.

Take equal care of stirring the syrup and keep the flame high.

If you want, you can add any flavor, essence or color according to your taste in the syrup to make Petha more attractive.

Dry the delicious Petha completely before serving, so that there is a crispy outer layer and juicy inside.
