Sweet rice is a traditional sweet dish which is very delicious to eat.

It is very easy to make. Rice is cooked on dum (dum) so that the flavour of all the ingredients can come in the rice.

Sweet rice is especially made at home on special occasions and festivals.

Basmati rice and sugar are the main ingredients to make it.

But for better taste and aroma, spices like green cardamom, cloves, bay leaves, cinnamon and saffron are added to it.

Apart from this, the dry fruits added to it make it even more delicious.

So let us know the method of making Sweet Rice Recipe.

Ingredients for Sweet Rice Recipe:

  1. Basmati rice – 1 cup
  2. Milk – 1/2 cup
  3. Sugar – 3/4 cup
  4. Ghee – 2-3 tablespoons
  5. Saffron – 20-25 strands
  6. Cashews – 12-14, chopped
  7. Almonds – 8-10, chopped
  8. Raisins – 1 tablespoon
  9. Pistachio – 4-5 chopped
  10. Green cardamom – 4-5, peeled and crushed
  11. Cinnamon – 1/2 inch pieces
  12. Cloves – 4-5
  13. Bay lea – 1

How to Make Sweet Rice:

To make sweet rice, first clean the basmati rice, wash it 3-4 times with water and soak it in enough water for 20-30 minutes.

Put the saffron in the milk and keep it aside. Remove the rice from the water.

Boil the rice in a pan with 2 cups of water on medium flame.

Do not cook it till it becomes too soft, just boil it till it is 85% – 90% cooked.

Place the rice in a sieve to drain out excess water.

Put ghee in a heavy bottom pan and heat it on low flame.

Add bay leaves, cinnamon, cloves and green cardamom to it and fry for some time.

Add sugar and 1/4 cup water and mix well.

Add saffron dissolved in milk and cardamom powder.

Keep stirring the mixture continuously with a spoon until the sugar dissolves.

After the sugar dissolves, put the mixture to boil over medium flame.

When the mixture starts boiling, add cooked rice to it.

Mix them gently and stir till every grain of rice turns yellow in color.

After this, reduce the flame and cover it with a lid.

Cook it till all the milk dries up.

Turn off the gas and let it set for some time. After that open the lid.

Add cashews, almonds, raisins and pistachios to it and mix well.

Flavourful sweet rice with aromatic fragrance is ready to serve.

Transfer the yellow rice to a serving bowl and serve and eat hot or cold.

Suggestion:

If basmati rice is not available then use any rice.

To keep the rice grains fluffy, always cook rice in a pan, do not use a pressure cooker.

If possible, when you cook rice, cook it with 1 teaspoon oil.

Once you have cooked the rice, cool it properly by spreading it on a flat plate so that each grain remains separate.

You can increase or decrease the amount of sugar according to your taste.

You can use dry fruits by lightly frying them in one tablespoon ghee.

If you do not want to add saffron, then add a pinch of yellow or saffron colour used in food.
