Ingredients for Carrot Milk Recipe:

  1. Carrots – 2
  2. Milk – 2 cups
  3. Almonds – 4-5 or any dry fruits
  4. Green cardamom powder – 1/4 tsp
  5. Sugar – as per taste

How to Make Carrot Milk:

To make carrot milk, first peel the carrots, wash them with water and cut them into small pieces.

After this, take enough water, chopped carrots and almonds in a deep pan.

Cook it on medium flame till the carrots become soft.

Turn off the gas, take everything out and let it cool completely.

Now put boiled carrots and almonds in the mixer jar and grind until smooth.

Heat the milk in a deep pan over medium flame and let it boil for 5 minutes.

Add carrot puree to it, mix and cook while stirring for 3-4 minutes.

Add sugar and green cardamom powder. Mix everything well and cook while stirring till the sugar dissolves.

Check the sweetness of the milk, add more sugar if required and cook for 1 minute.

Switch off the gas and pour the carrot milk into the glass.

Garnish with chopped almonds and pistachios and serve hot.

Suggestion:

This recipe calls for cooking the carrots and almonds in a pan, but you can also use a pressure cooker or Instant Pot to speed up the process.

If you don’t like the carrot pieces going into your mouth, you can strain the milk.

Jaggery or maybe can be used as a substitute for sugar.

If you do not have green cardamom powder then crush 2-3 green cardamoms and add it to the milk.

You can also add a few strands of saffron to this drink to improve the quality of sleep.

Do not throw away the water from the boiled carrots as you can use it while kneading the dough.

Once the carrot milk cools completely, you can store it in an air-tight container in the refrigerator for 2-3 days.
